The story of Saltare:
Carla produces mainly MCC as well as small volumes of Chenin blanc and Syrah. She currently has four MCC’s: a fresh, zero-dosage Brut Nature, a 100% Pinot Noir Brut Rosé, a fuller 36-months-on-the-lees Brut Reserve and a re ned 42-months-on-the-lees Blanc de blancs.
Her aim is to find grapes of superior quality with good acidity and fine minerality.
Making Saltare Cap Classique is a slow process which requires patience and a sensitivity to nature. The grapes are pressed whole-bunch and only the cuvée juice (the best part) is used for the primary fermentation. A second fermentation the base wine is left on the lees for six months with some batonnage that adds elegance and length to the palate. A combination of barrel and steel vat fermentation enhances a diversity of expression of the wine.
